Hida beef comes from a black-coated Japanese cattle breed, raised for at least 14 months in Gifu Prefecture, in the heart of the Japanese Alps.
This exceptional meat is distinguished by its tenderness and juiciness, making it a true culinary work of art. To obtain the prestigious Hida-gyu appellation, the meat must be classified as "excellent" (A or B) by the Brand Promotion Office.
Certified Protected Geographical Indication — a privilege reserved for the elite Japanese prefectures.

A texture quality score between 3 and 5 from the Japanese Meat Grading Association is required for the Hida-gyu appellation.
