Wagyu A5 × Junmai Sake

Wagyu A5 <em>×</em> Sake Junmai

Sake is not like other table alcohols. It lives in symbiosis with Japanese cuisine — and particularly with Wagyu. Junmai (pure rice, no added alcohol) is the ideal companion for shimofuri: both exhibit umami with the same precision.

Junmai sake is made only with rice, koji, water, and yeast. No added brewing alcohol. This purity results in a rounder, less dry sake, with lactic and fruity notes reminiscent of cheese fermentation.

Wagyu A5, meanwhile, is defined by its marbling (BMS 8-12). When seared for 30 seconds per side, the intramuscular fat melts, releasing its aromatic lipids. The sake "cleanses" this richness on the palate, without masking the meat.

The moment

The ritual: sake served at 12°C, in a fine ceramic cup. Wagyu seared à la minute, fleur de sel, no sauce. One bite, one sip. The sake amplifies the umami of the Wagyu, and the Wagyu gives body to the sake. Neither dominates.

To avoid: hot sake (atsukan) with raw Wagyu — the heat overwhelms the delicacy of the meat. To prefer: a junmai ginjo from Hyogo, Yamada Nishiki rice, 60% polishing. This is the standard chefs look for.

Three variations

**Junmai Daiginjo** (50% polishing or less) — more floral, more precise. With leaner Wagyu (sirloin, BMS 8-9). The sake doesn't have to contend with the fat.

**Yamahai** (ancestral lactic method) — more rustic, more mineral. With very marbled Wagyu (BMS 11-12). The rustic nature of the sake balances the opulence of the Wagyu.

**Sparkling junmai** — lighter, more festive. With raw Wagyu in tartare or carpaccio. The fine bubbles refresh the palate between each bite.
